Super Oats

Super Oats, to the rescue!!!

So I started to write this post to help educate you on each ingredient in my Super Oats…. but then I hated the way it came out.  The post sounded clinical and scripted, and I hate that.  That isn’t me. 

I deleted every single word I wrote about it and started over… with this.  The real me.

I planned on telling you the health benefits of oatmeal and why you should eat it in the morning, and why it is so good for you… blah blah blah.  And blueberries with their high vitamin C and superman free radical killing powers.  Almonds and coconut, oh my!

You know that these ingredients are good for you.  I don’t need to tell you that.  And if you really want to know each individual ingredient benefit, you can Google them just like I did.

This is what I DO know.  My Super Oats are amazing.  I was eating plain oatmeal every morning and it was getting really boring.  I know that eating oats in the morning is good for me.  I know that it will give me a sustained energy burn and help me feel full through my morning and help me get through my intense workout sesh.  I know that eating oats is going to give me a big boost of fiber and that eating them day after day… plain… is just plain snooze worthy.

So I gave my oats a makeover and they have been transformed into Super Oats! (cue Super Man movie soundtrack!)  I added blueberries and toasted almonds and coconut flakes. 

The ingredients are whole.  Simple.  Easy.  Good for you.

Here is what you will need to make your own and I will take a few minutes to walk you through how I make them… and then go run into your kitchen and whip up some of your own…. cause mine are already gone!

  • 1/3 rolled oats
  • water (to cook your oats in)
  • handful of organic blueberries (sorry I cook like an Italian)
  • 2 tbsp unsweetened coconut flakes
  • 2 tbsp raw almond slivers



 Start with your oats.  I never measure mine out, but if I did I would say I probably put 1/3 c in a bowl and add some water… enough to cover the oats.  I like mine not runny.  I take the lazy way and put them in the microwave for 2 minutes.  Through trial and error, and many times of me cleaning my microwave, I have found that 2 minutes is the sweet spot time.

While my oats are cooking, I heat a pan on medium high (no greasing necessary since cooking the coconut and almonds bring out their oils) and put the unsweetened coconut flakes in the pan along with the slivered almonds.  Stir constantly for about 5 minutes, or until golden brown and toasty!





I top my already cooked oatmeal with a handful of organic blueberries, then toss my toasted bits on top. 



Then I eat it, without coming up for air, because it is so good.  So so good.  And healthy.  And clean eats.
