Shakeology Peanut Butter Cups

Alright. 

I admit it.

I have a sweet tooth.

Lately I have been able to satisfy it with fruit... especially when it strikes at night after dinner. 

Speaking of dinner, let's talk about dinner TONIGHT.  As you all know, I spent the past 3 weeks taking on the 21 Day Fix Extreme... meal plan and all.  It was GOOD... who am I kidding, it was GREAT.  My results were on point.  I couldn't be happier.  (You can read all about it here.) I decided to take a one week "break" from the meal plan.  I am still eating clean, and trying to stay on with my macros... BUT, I have been allowing for some wiggle room in my diet.  Dinner tonight?  PIZZA!  It is my weakness.  We all have one. And pizza is mine.  I love everything about it.  The Italian in me SCREAMS for it and sometimes the only way to shut it up is to eat some pizza.

Let's talk about that pizza.  Hot, cheesy, garlicky, white pizza with fresh tomatoes.  Mmmmmmm. It was so worth it.  Of course, I know that when I flood my system with food like this, I will inevitably have a crash and feel hungry again.  Well that time came a few hours after dinner and my thoughts turned to analyzing everything in my fridge and pantry trying to decide if there might be some chocolate I could nosh on. Then I remembered a post I had seen.... about making chocolate with Shakeology.  Yep, you heard me right!

I decided to take it one GIANT step further because my chocolate love is a Reese's peanut cup.  There is just something abut peanut butter and chocolate together.  Can I hear an AMEN!?

I have to admit I was pretty skeptical that this was going to be any good, but I thought.. if I am going to do this, I am going to do it right. Here is what you will need for your cups....

  • 1 scoop chocolate (or Vegan chocolate in my case) Shakeology
  • 1 tbsp coconut oil (melted)
  • 6-8 small cupcake wrappers
  • Organic peanut butter (I did not measure this out but I probably used a couple tablespoons)
  • Freezer
  • Time

Ok... you got all those?  

  1. Melt your coconut oil 
  2. Mix in your Shakeo
  3. Spoon a small amount (again I did not measure.. sorry that is the Italian in me coming out again) into your baking cups.
  4. Place in freezer for 15 mins
  5. Remove from freezer and spoon an unknown amt of PB into each cup.
  6. Top with remaining amount of liquid Shakeo.
  7. Place back in freezer for 15 mins.
  8. Take out of freezer.
  9. Try not to eat all of them at once.

Oh. Em. Gee.  You guys HAVE to try these!!  I am pretty much blown away with these little nutritious bites... I mean how can it possible that something SO good for you can taste THIS good!
