Pinterest to the Rescue!
It was one of those days... you know ---
Wake up late.
Hurry and get kids up and ready for school.
Eat this. Hurry get your bookbag!
What? You don't know where your book bag is?!
Oh no, is he over there throwing up on the couch?
Crap.
Take one to school.
Come home.
Bleach. The. Entire. House.
Clean the kitchen, tend to sick child.
Clean the bathrooms, tend to sick child.
Run a sanitize load in the washing machine, tend to sick child.
Sit down. Oops... closed my eyes for 5 or 40 minutes.. no one will ever know.
Answer 357 emails and texts missed during those 40 minutes... did I say 40? I meant 5....
Is it already time to for preschool pick up!? How. Why.
Get in the car.
Look in the mirror while in car line... wow.... did I even CHECK the mirrors at home while cleaning the bathrooms!?
Crap... did I drink my coffee today?!
Come home, make lunch.
Clean the kitchen again, tend to sick child.
The washing machine is chiming... damn that chime.. gotta figure out how to shut that off so I can REALLY have an excuse to let my laundry sit... wet.... smelly... moldy.
Vacuum floors.
Mop floors with bleach solution, tend to sick child.
Sick child and well child are snuggling on the couch.
Crap.
Now that one is going to be sick.
Sit down. Oops... did I fall asleep again?
I haven't worked out yet today... I should probably do that.
Whoa, I missed HOW many Facebook notifications today... check Facebook for 45 minutes.
Look up and realize it is already 3 in the afternoon and have no idea what I am making for dinner.....

So, yeah.... it's been that kind of a day. I get on my Clean EATING board on Pinterest in the hopes that there is SOMETHING I can make on there that I have all the ingredients for. Scroll. Scroll. Scroll. Oooooooooo no bake protein balls.

Wait... I am looking for dinner.
Go back.
Now the boys are fighting and hurting each other..... oh wait... he is actually hurt.
It's just a little blood. You don't need a bandaid. Ok you can have a bandaid.
Back to finding dinner.
I really want to use my crock pot because my kitchen is so clean.
*Cue angelic music* I found a recipe.
I think I have everything.
Get everything out.
Turn the crockpot on "burning hot on the outside too" hot.
Chicken. Check!
Black beans. Check!
Corn. Hmmmmm half? Ok it will do. Check!
Salsa. Check!
Wow I am on a roll.
Garlic, chili powder, S&P, cumin, cayenne, oregano. Check, check, check, check, check, NOPE!
Google oregano substitute.
Put everything in crock pot.
Pray it is ready in time for dinner.

Oh you want that recipe too? Geesh! Well I would love to take credit for it, but I can only take credit for feeling like I wasted my day away. I have made this recipe many times in the past and it is always a family favorite. There are so many options with it too, you can make rice bowls with it... which I always use brown rice or quinoa. You can make tacos with it. Or you can put it on a bed of fresh romaine lettuce for a great taco salad. So here is what you will need for this recipe:

- 1½ lbs. chicken breasts
- 1 (16 oz.) jar salsa
- 1 (15 oz.) can black beans, drained
- ½ lb. (8 oz.) frozen corn
- 1 Tbsp chili powder
- ½ Tbsp cumin
- ½ Tbsp minced garlic
- ½ tsp dried oregano
- ¼ tsp cayenne pepper
- ¼ tsp salt
- to taste cracked pepper
- 8 oz. shredded cheddar
- ½ bunch cilantro (optional)
