Protein Balls

So I have these things I make in our house.... my kids call them protein balls... but really they are just clean eating no bake cookies.  And they are freakin' amazing!

When we started our clean eating journey, I knew that I was going to have to kick the cookie habit. (sad day in this house-> those Publix cookies are so darn good, am I right?) 

I was excited when a friend of mine sent me this recipe and it has been a huge hit in our house ever since.  These are SO easy, SO quick, and SO fun to make.  Because let's be honest, if I am going to give up cookies, and am already stressed for time... if it isn't easy, quick and fun, this mama isn't doing it!

I hope your family loves these as much as we do!

Here is what you will need:
1 cup old fashioned rolled oats (uncooked)
1/2 cup peanut butter (typically I use organic, but for this recipe I used up the kids PB)
1/2 cup ground flax seed
1/2 cup dark chocolate chips
1/3 cup honey
1 tsp vanilla extract
Dash of cinnamon



Once you have gathered your ingredients, put everything in one bowl and stir until well mixed. 



I like to use my little 1/2 inch Pampered Chef scooper to shape mine, but you can roll them with your hands... but I like the easy way out!  I scoop mine right into an airtight container and pop them in the fridge. 



If you want to eat them right away, I would say to put them in the freezer for about 15 minutes so they set up a little.  Otherwise, store in the fridge and when you are craving a sweet treat without all the guilt.. they are there, ready and waiting!
