Short Sweet Prep
Busy Busy Busy.
Yep, we are all busy. There is some misconception about what I do all day. I get a lot of "must be nice to stay home" or "I bet you get a lot of time to yourself" Which is partly true. Yes... it IS nice to stay home. But I am far from rested. I am on the go, running errands, keeping my house in order, paying bills, running my own online health and fitness coaching business, getting the family schedule in check, dropping the kids off, picking the kids up, soccer, soccer, and more soccer. Trust me... I wish I could say that the time I get to spend by myself was relaxing.
Sometimes it is. But for the most part, I am on my feet all day. I know there are stay at home parents out there that can relate. And for all the working parents... I just don't know how YOU do it.
But you wanna know MY secret? It's a good one! Are you ready for this???
You and I have the SAME 24 hours to work with. For me... I get it all done... because I manage my time. I get a lot of complaints about fitness.... "I just don't have enough time to work out" Well neither do I... because we have the same amount of time in our days, I just MAKE it fit. The same goes for nutrition... "I just don't have the time to make healthy and nutritious meals." Yes you do. You just have to MAKE it fit.
So.... today, let's talk about prep. This is something I do each and every week and TRUST ME, it takes a lot of meal planning stress out of the time that I do have. Once a week, I prep out grilled chicken. This is going to be very simple.
Buy a LOT of skinless chicken breasts. Immediately marinate them... for this batch I used garlic, olive oil, lime juice and Italian seasoning. I mixed it all up and poured it over my chicken in a gallon ziploc bag. I left it in the fridge overnight. The next day, I fired up the grill right before lunch... because I am going to have grilled chicken for lunch! And grilled ALL of it. This will now be lunch today, dinner tonight and lunch again tomorrow. Depending on how many breasts I grill, this can last for longer than two days.
Trust me when I say.... this WILL ease some meal stress.... AND as a huge added bonus, you can get your workday in without worrying about throwing together a healthy meal when you come home. It will be done. Cut it up, throw it on some baby spinach with some other chopped (and prepped out veggies wink wink) and wa-la! A HEALTHY and QUICK and EASY and STRESS-FREE dinner!
