Fresh Salsa Recipe

Good God.

I am such a sucker for chips and salsa. S U C K E R!

I can go into a Mexican restaurant and just eat chips and salsa!

It's a meal right?

I thought so.

So, for years I have played around with different recipes... in fact I even put a recipe for fresh-ish salsa (I say that because there are some canned ingredients in it) in my Clean Eating 101 book that I published this year (Click HERE to order your own copy! Yes, that is a shameless plug :) )  But THIS recipe takes the cake... at least for now, until I find a way to tweak it.

I ate this, and only this for lunch today... with those authentic chips... Xochitl is the brand.... mmm mmm mmm well now I am thinking late night snack!

So here you go.  Let me know what you think, cause I know you are gonna try it!!!



Ingredients

5-6 Vine ripe tomatoes
1 medium vidalia onion, chopped
1/2 medium red onion, chopped
2 large jalepenos, seeded and ribbed, finely chopped (y'all I wear GLOVES to cut these puppies!)
Cilantro, to taste.  Hubby hates it, I loooooooooooove it so there has to be a happy medium in our house
3 large cloves of garlic, pressed
The juice of 3 limes
1 tsp sea salt
1 tsp chili powder
1tbsp cumin


That is it!  Mix it all together.  I am not a canner, so if you love to can, please let me know how this recipe holds up in a jar! :) ENJOY!  Betcha it won't last more than 3 days in your house!
