I Want Pancakes...

This morning, my boys asked for desperately for pancakes.

"Puuuuhhhhhleeeeeaaaassseeee Mommeeeeeeeeee"

How can I say no to that??

So I made their pancakes.  Full blown.  Bisquick, milk, eggs a dash of vanilla.  Topped with powdered sugar and syrup.  That smell.  That delicious smell invaded my nostrils and my stomach started asking for some too....

"Puuuuuhhhhhhleeeeeaaassseeee give me pancakes!!!!!"

How can I say no to that!?

So I made MY pancakes.  Full blown.  Nutritious goodness.  Probably should have made these for the boys too, but something tells me that they would find some reason to hate them.  They would pick at them.  Push them around their plate. Not eat them.  Throw them away. Then ten minutes later be raiding my pantry for something else bad for them.  (Which, unfortunately, they probably wouldn't find... me telling them that oatmeal is the same as Cinnamon Toast Crunch has NEVER worked!)

I am sure you have all seen this recipe... floating around Pinterest... online... in magazines... your neighbor makes them... I get it.  They are super simple.  Yet, I have tried and FAILED many times at making these.  I don't know what was different this morning.  Maybe a full night's sleep last night put me in a more zen and patient mood?  So here you go... simple, nutritious, pancakes!

What you will need:
  • 1 slightly mushy, overripe banana
  • 2 eggs
  • dash of vanilla
  • dash of cinnamon
  • teaspoon coconut oil
  • shelled walnuts (maybe 2 tbls)
  • nice large frying pan
Step 1:  Gather all your supplies!



Step 2: Mush up your bananas with a fork





Step 3: Add your eggs, vanilla and cinnamon and wisk with your fork!! Yum!



Step 4:  Put your coconut oil and walnuts in your heated pan, keep on medium heat






Step 5: Pour your batter into pan


  

Step 6: Cook on one side for about 5-8 minutes, or until the center is the only part that isn't "runny", flip and then cook for an additional 5 minutes.




 Serve with fresh fruit and a tablespoon of warm, organic maple syrup. (which by the way, you probably will only need about a tsp because these pancakes are already sweet from the banana!)
