Cold Healthy Summer Treat

It has been so darn hot here recently!  I mean, HOOOOOT... heat index in the 100s!  Thank goodness the humidity during the day hasn't kicked in yet.  My hair couldn't handle it.  Just the other day I actually said OUT LOUD that I wanted to chop all my hair off.  EEK!  I have spent years growing out my hair and it is finally to the length I have "always wanted" and I am SERIOUSLY contemplating cutting it.  Not too short.  Just shortER.  Short enough that it doesn't take me 20 hot grueling minutes to dry it.  And by the time I am done... I have sweat off all my makeup.  Ugh. 

So the other day, I made the kids homemade popsicles. Well I say "homemade" but I really mean, I mixed coconut milk with Simply Fruit Punch and put it in these really cute fish popsicle molds.  They loved them.  But I was really craving something cold.  And sweet.  Then it hit me!  I remembered our neighbor giving the boys these Dole frozen chocolate covered banana slices... I of course had to taste them and they were delicious!  But I couldn't stop just there.

Oh no.  I had to make them super food cold sweet treats!


Remember the post when I made the Shakeology chocolate peanut butter cups?  If not, you can read it here.  Well this is kind of like that.... only colder... and sweeter!!!!


Now, if you don't like peanut butter... but let's be honest, PB is sooooooo good... but if you don't like it, you can omit it and just make chocolate covered banana bites.  Here is what I did though:

First, I used a just-turned-ripe-banana so it was still a little solid, not mushy. And cut it into cute little slices....

Once, you have done that... you want to make little banana and peanut butter sandwiches.  You can use any kind of nut butter here, I just prefer PB.  It makes me happy.  :)


Now, it's time to prepare your Shakeology Chocolate.  Melt 1 tbls of pure coconut oil in a small mixing bowl and add 1 scoop of your favorite chocolate flavored Shakeology (I prefer Vegan). Stir for a few minutes until the chocolate is smooth and creamy.


Now, you are ready to dip your little banana sandwiches into the chocolate.  I only dipped half of mine in.  I thought if I covered the WHOLE thing, it would be too rich (I was right... just sayin').


After dipping, I put my treats in the freezer.  Waiting (super impatiently) for a few hours.  Then pulled one out to enjoy.  Let me just tell you..... AMAZING!!!!

Step 7?  EAT!!!!



I am in love with these little bites.  They are cold.  They are sweet.  They have a little salty flavor (thanks to my good friend peanut butter) and more importantly... they hit the spot!  Let me know if you try these. They were simple and quick to make, considered clean-eats and have Shakekology on them... they are perfect!
