Baked Buffalo Chicken
For the sake of the fact that I know you really only came to this post to find out how to make this amazingly delicious and simple dinner... I will spare you any and all details and stories leading up to why I made this!
((I'm totally guilty of making blog posts like that yet I secretly sometimes hate posts that I feel compelled to read the entire thing just so I can get to the part that I REALLY want to read))
Here is what I used to make this recipe (I always make more than we need for dinner so I can eat it for lunch the next day!)
- 6 boneless, skinless chicken breasts
- 2 green bell peppers
- 1 yellow bell pepper
- 1 red bell pepper
- 1 c buffalo hot sauce (I faithfully use Frank's)
- 4 tbsp butter, or refined coconut oil
- Fresh ground pepper, to taste
- 4 tbsp fresh lime juice
- Olive oil, to grease dish
- Shredded cheddar cheese, to taste (OPTIONAL)
STEP ONE:
Preheat your oven to 350 degrees F
STEP TWO:
Lightly grease a 13x9 baking dish with olive oil... like the tiniest bit just to make sure you chicken doesn't stick.
STEP THREE:
Clean your chicken (get rid of excess fat, veins, and connective tissue... cause no one wants to eat that anyhow!) Place chicken breasts side by side in your dish.
STEP FOUR:
Make your buffalo sauce.
Melt butter in microwave in a microwave safe bowl.
Add your hot sauce, lime juice and black pepper.
Whisk until thoroughly mixed.
Pour sauce over your chicken.
STEP FIVE:
Slice your bell peppers into strips and place on top of chicken and sauce.
STEP SIX (optional):
Sprinkle shredded cheddar cheese over your peppers.
STEP SEVEN:
Bake in preheated oven for approximately 30-45 minutes or until internal temperature of your chicken is at least 160 degrees F and juices run clear.
STEP EIGHT:
Serve with your favorite super food side... we usually eat this with cooked quinoa or brown rice. Shovel into your mouth and ENJOY! :)
So, that is it! Simple, easy, one dish wonder. And if you love spicy food as much as this family loves spicy food you will be VERY happy with this for dinner AND for lunch the next day!!
