Bruschetta Chicken



Yesterday was one of those days that just got away from me.

Before I knew it, it was 3 in the afternoon and I hadn't planned for dinner yet.  Luckily, when I buy my chicken, I buy LOTS of it and clean and freeze what I don't use right away.

I pulled a package of chicken from my freezer and went to work trying to figure out what to make of it.  The great thing about chicken is, you can pretty much do anything with it! 

Last night, I really wanted something Italian... so I pulled my bruscetta chicken recipe from my brain files.... EXCEPT the only ingredient I didn't have was basil.  I gotta love when my best friend comes to the rescue!  I happened to be on the phone with her and we were talking about dinner prep and I told her I was going to have to run out for basil... but she had some spare!  YAY!  I was set!

So here is what you do... you will want to marinate your chicken.  Yesterday I wasn't feelin' very fancy so I marinated it in olive oil and red wine vinegar.  Yep, that's it!  Who says marinades have to have dozens of ingredients??  Ain't nobody got time for that!








Then I made the bruschetta.  Again, no need to have a bunch of ingredients.  I used a container of cherry tomatoes, sliced in half, about a quarter cup of fresh grated parmesan cheese, approximately a cup of chopped fresh basil, three cloves of garlic (pressed), and a tablespoon or two of olive oil. 

See.  Simple.

I covered that and put it in the fridge with the marinading chicken until it was time to cook.



From there, it is only a few steps away from dinner time.  Grill your chicken until just about done (about 140-150 degrees F internal temp).  I use my Pampered Chef grill basket (hello!  LOVE this thing!) to finish the recipe off. 






Place the chicken in the basket and cover with the bruchetta.  Shut your grill for about 10 minutes, come back and get your goods and enjoy!


Last night I served this with grilled zuchinni and a small sweet potato!

This recipe makes the most simple and delicious chicken.  Promise!
